# Step-by-Step Guide:

01 - Heat vegetable oil in a large skillet over medium heat. Add chopped onion and sauté until softened, approximately 5 minutes. Incorporate minced garlic and grated ginger, cooking for 1 minute. Add ground cumin, coriander, turmeric, and garam masala, cooking until aromatic, about 1 minute. Stir in diced tomatoes, drained chickpeas, coconut milk, and salt. Mix thoroughly, bring to a gentle simmer, and cook uncovered for 15 minutes with occasional stirring. Finish with a garnish of fresh cilantro before serving.
02 - Warm coconut oil in a large pan over medium heat. Add diced onion and cook until translucent, about 4 minutes. Stir in minced garlic and red curry paste; sauté for 1 minute. Add rinsed lentils, coconut milk, vegetable broth, sliced carrot, and sliced red bell pepper.
