# Step-by-Step Guide:

01 - Set the oven to 425°F (220°C) to prepare for roasting.
02 - In a large rimmed baking sheet, combine the halved baby potatoes, sliced bell peppers, sliced red onion, olive oil, minced garlic, oregano, thyme, smoked paprika, salt, black pepper, and optional red pepper flakes; toss until evenly coated.
