01 - Preheat the oven to 400°F (200°C). Lightly grease a large baking dish with olive oil.
02 - Place pork chops in the prepared baking dish. Sprinkle both sides evenly with salt, black pepper, smoked paprika, and ground cumin.
03 - Distribute sliced red onion and red bell pepper around the pork chops for even coverage.
04 - In a mixing bowl, combine BBQ sauce, diced mango, honey, and apple cider vinegar. Mix thoroughly to incorporate.
05 - Pour mango BBQ sauce evenly over the pork chops and vegetables. Cover the baking dish with aluminum foil.
06 - Bake covered for 25 minutes to allow flavors to meld.
07 - Remove foil and bake for an additional 15 minutes, until pork chops reach an internal temperature of 145°F (63°C) and sauce is bubbling.
08 - Optional: Broil 2–3 minutes to caramelize the sauce on top of the pork chops.
09 - Allow pork chops to rest for 5 minutes before serving. Garnish with freshly chopped cilantro if desired.
