01 - Preheat oven to 400°F and line a baking sheet with parchment paper.
02 - In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
03 - Add the cold unsalted butter cubes. Cut in the butter using a pastry blender or fingertips until the mixture forms coarse crumbs.
04 - Stir the diced apple into the crumb mixture, ensuring even distribution.
05 - In a separate bowl, whisk together honey, milk or cream, beaten egg, and vanilla extract until well incorporated.
06 - Pour wet ingredients into the dry mixture. Gently stir until just combined, taking care not to overwork the dough.
07 - Turn the dough onto a lightly floured surface. Pat into a round approximately 1 inch thick.
08 - Slice the dough round into 8 equal wedges. Position on the prepared baking sheet with space between each piece.
09 - Brush each scone with a little milk or cream. Optionally, sprinkle tops with coarse sugar.
