Ingredients
- All-purpose flour: 2 cups (250 g)
 - Whey protein powder (vanilla or unflavored): 1/2 cup (60 g)
 - Granulated sugar: 1/4 cup (50 g)
 - Baking powder: 2 tsp
 - Baking soda: 1/2 tsp
 - Salt: 1/2 tsp
 - Ricotta cheese: 1 cup (250 g)
 - Ripe bananas, mashed: 2 medium (about 1 cup)
 - Large egg: 1
 - Unsalted butter, melted and slightly cooled: 1/4 cup (60 ml)
 - Vanilla extract: 1 tsp
 - Optional add-ins (chopped walnuts or pecans): 1/2 cup (60 g)
 - Optional add-ins (mini chocolate chips): 1/3 cup (60 g)
 
Instructions
- Preheat oven:
 - Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
 - Mix dry ingredients:
 - In a large bowl, whisk together flour, protein powder, sugar, baking powder, baking soda, and salt.
 - Mix wet ingredients:
 - In another bowl, whisk together ricotta, mashed bananas, egg, melted butter, and vanilla extract until smooth.
 - Combine ingredients:
 - Add the wet ingredients to the dry ingredients and stir gently until just combined. Do not overmix.
 - Add-ins:
 - Fold in nuts and chocolate chips, if using.
 - Shape dough:
 - Turn dough out onto a lightly floured surface. Gently pat into a 7-inch (18 cm) circle, about 1-inch (2.5 cm) thick.
 - Cut and arrange:
 - Cut into 8 wedges and transfer to the prepared baking sheet, spacing them slightly apart.
 - Bake:
 - Bake for 18–22 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
 - Cool:
 - Cool on a wire rack for 10 minutes before serving.
