01 - Set oven to 400°F. Line a baking sheet with parchment paper.
02 - Melt butter in a small saucepan over medium heat. Add minced garlic and sauté for 1 minute. Stir in heavy cream and bring to a gentle simmer. Add Parmesan cheese, stirring until melted and smooth. Season with salt and black pepper. Remove from heat and allow to cool slightly.
03 - Heat olive oil in a skillet over medium heat. Add garlic and sauté until aromatic, about 30 seconds. Add chopped spinach and cook until wilted, approximately 2 minutes. Season lightly with salt and let cool.
04 - Lightly dust a work surface with flour. Roll out pizza dough to a 12x15-inch rectangle.
05 - Spread Alfredo sauce evenly over the dough, leaving a 1/2-inch border. Distribute sautéed spinach over sauce. Sprinkle mozzarella and red pepper flakes, if desired, on top.
06 - Starting from one long side, roll dough tightly into a log. Pinch the seam to seal. Slice into 12 equal pieces.
07 - Place the rolls, cut side up, on prepared baking sheet. Brush tops with melted butter, sprinkle with Parmesan and dried Italian herbs.
08 - Bake for 18 to 22 minutes until golden brown and bubbly.
09 - Allow rolls to cool slightly before serving.
