17 - ¼ tsp black pepper

# Step-by-Step Guide:

01 - Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and zucchini. Cook for 5 minutes until vegetables soften.
02 - Stir in spinach and tomato; cook 2 minutes until spinach wilts. Add black beans, ground cumin, smoked paprika, salt, and pepper. Stir and cook 1 minute. Remove vegetables from skillet and set aside.
03 - Whisk eggs and milk in a bowl. Pour into the same skillet and scramble until just set. Remove from heat and mix in shredded cheese.
04 - Heat tortillas in a dry skillet or microwave for 20 seconds until warm and pliable.

06 - Fold sides inward and roll tortilla tightly. Serve immediately or wrap in foil for portability.

# Additional Tips::

01 -
  • It keeps you full for hours without that heavy, sluggish feeling some breakfast wraps leave behind.
  • You can prep the veggies the night before and have a hot, nourishing meal ready in under ten minutes.
  • The combination of smoky paprika and creamy avocado tastes way more indulgent than the ingredient list suggests.
02 -
  • Seeding the tomato is not optional if you want to avoid a soggy tortilla that falls apart halfway through eating.
  • Don't skip warming the tortillas, cold tortillas crack and tear the moment you try to fold them.
  • Remove the eggs from the heat just before they look fully done, they'll finish cooking in their own residual heat and stay soft.
03 -
  • Let the scrambled eggs sit off the heat for thirty seconds before adding the cheese so it melts smoothly instead of clumping.
  • Roll the burrito as tightly as you can without tearing the tortilla, loose wraps fall apart and lose all their filling.
  • If you're reheating in the microwave, wrap the burrito in a damp paper towel first to keep the tortilla from drying out.
