01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - In a large mixing bowl, whisk together all-purpose flour, granulated sugar, baking powder, and salt.
03 - Add cold cubed unsalted butter. Using a pastry blender or fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.
04 - Stir in dried tart cherries or chopped, well-drained cherries.
05 - In a separate bowl, mix sparkling cherry soda, heavy cream, and vanilla extract until combined.
06 - Pour wet mixture into dry mixture and gently stir until just combined. Do not overmix.
07 - Turn dough onto a lightly floured surface and gently pat into a round approximately 1 inch thick.
08 - Cut the dough into 8 wedges and place them evenly on the prepared baking sheet.
09 - Brush tops with additional heavy cream and sprinkle with coarse sugar if desired.
10 - Bake at 400°F for 16 to 18 minutes until golden and set. Cool on a wire rack before serving.
