01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - In a mixing bowl, gently mix chopped shrimp, avocado, cheddar cheese, spring onions, minced garlic, cilantro, lime juice, smoked paprika, black pepper, and salt until evenly distributed.
03 - Roll out puff pastry on a lightly floured surface and cut into 8 equal rectangles, approximately 4 by 5 inches each.
04 - Place 2 to 3 tablespoons of the prepared filling in the center of each pastry rectangle.
05 - Fold each pastry rectangle over to enclose the filling, then press edges with a fork to seal tightly.
06 - Arrange the pockets on the lined baking sheet and brush the tops with beaten egg.
07 - Bake for 18 to 20 minutes until the pastry is golden brown and puffed.
08 - Allow pockets to cool slightly on the baking sheet before serving warm.
