01 - Set oven temperature to 425°F and allow to preheat completely.
02 - Slice bell peppers and onions. Halve the baby potatoes for even roasting.
03 - Spread bell peppers, onions, and potatoes evenly on a large sheet pan. Drizzle with olive oil, sprinkle with oregano, salt, and black pepper. Toss to coat all vegetables thoroughly.
04 - Nestle the uncooked sausages among the vegetables on the sheet pan.
05 - Transfer the sheet pan to the oven and roast for 30 to 35 minutes, turning sausages halfway through, until sausages are cooked through and potatoes are golden and tender.
06 - Remove from oven and let rest for 5 minutes before serving hot.
