01 - Preheat oven to 375°F. On a lightly floured surface, cut puff pastry into 2-inch squares and arrange them on a parchment-lined baking sheet, leaving space between each piece.
02 - Evenly distribute softened goat cheese onto the center of each pastry square. Arrange beet slices over the goat cheese.
03 - Sprinkle each tartlet with fresh thyme leaves, kosher salt, and black pepper.
04 - Place baking sheet in the preheated oven and bake for 15 to 20 minutes or until the pastry is puffed and golden brown.
05 - Remove from oven and transfer tartlets to a wire rack to cool slightly before serving.
