01 - Evenly spread pizza sauce over half of each flour tortilla.
02 - Sprinkle mozzarella cheese over the pizza sauce and add pepperoni slices if desired. Fold each tortilla in half to enclose the filling.
03 - Heat a non-stick skillet over medium heat. Place each folded quesadilla in the skillet and cook for 2 to 3 minutes per side until golden brown and the cheese is fully melted.
04 - Transfer cooked quesadillas to a cutting board. Slice into wedges and serve immediately while warm.
