01 - Heat a large heavy-bottomed pot over medium-high heat. Add beef cubes in a single layer and cook, turning occasionally, until all sides are browned.
02 - Add carrots, potatoes, and onion to the browned beef. Stir in beef broth, tomato paste, minced garlic, salt, black pepper, and thyme until evenly combined.
03 - Reduce heat to low. Cover the pot and simmer for 2 hours, stirring occasionally, until the beef is fork-tender and vegetables are cooked through.
