Playful lemonade jelly cups with gummy bears, chilled and garnished with mint and lemon.

# What You’ll Need:

→ Jelly layer

01 - 1 cup fresh lemon juice
02 - 1 cup water
03 - 1/2 cup granulated sugar
04 - 3 envelopes (about 21 g / ≈6 3/4 teaspoons) unflavored gelatin powder
05 - Zest of 1 lemon

→ Gummy bear layer

06 - 1 cup assorted gummy bears

→ Decoration

07 - Fresh mint leaves, optional, for garnish
08 - Lemon slices, optional, for garnish

# Step-by-Step Guide:

01 - In a small saucepan, whisk together the lemon juice, water, and granulated sugar; sprinkle the gelatin evenly over the surface and let it sit for 2 minutes to bloom.
02 - Warm the mixture over medium heat, stirring constantly until the sugar and gelatin are completely dissolved; avoid boiling. Remove from the heat and stir in the lemon zest.
03 - Arrange 10–15 gummy bears in the base of each clear serving cup so they are evenly distributed and visible through the sides.
04 - Carefully pour the warm lemonade gelatin mixture over the gummy bears, filling each cup to the desired level while maintaining the arrangement.
05 - Allow the cups to rest at room temperature for about 10 minutes, then transfer to the refrigerator and chill for at least 2 hours, or until fully set.
06 - Before serving, garnish each cup with fresh mint leaves and a lemon slice if desired and serve chilled.

# Additional Tips::

01 -
  • Your friends will think you're a genius when they see those bright gummy bears peeking through lemony clouds.
  • It takes almost no time at all, but looks like something from a dessert café.
02 -
  • Once I rushed the gelatin bloom and ended up with rubbery, uneven jelly—patience is everything.
  • Placing the cups on a tray before pouring makes moving them to the fridge neat and spill-free.
03 -
  • Warming the cups slightly (a quick rinse with hot water) helps the jelly release if you want a fancier plated dessert.
  • Layering a few gummy bears halfway through pouring creates magical strata—learned this while distracted by a phone call, and now I do it on purpose.
