01 - Set the oven to 425°F (220°C) and allow it to come fully to temperature.
02 - In a small bowl, combine the minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper. Rub this mixture thoroughly over the entire chicken, making sure to cover both the skin and cavity.
03 - Place the seasoned chicken breast-side up in a roasting pan. Roast for about 1 hour and 15 minutes, or until the internal temperature in the thickest part of the thigh reads 165°F (75°C).
04 - Remove the chicken from the oven and allow it to rest for 10 minutes before carving. Serve carved chicken with lemon wedges.
