01 - Place chopped dark chocolate in a microwave-safe bowl or double boiler. Heat in 30-second intervals, stirring between each, until fully melted and smooth.
02 - Line a baking sheet with parchment paper. Pour the melted chocolate onto the prepared sheet and spread into a thin, even layer using a spatula.
03 - Evenly sprinkle the chopped dried cherries and pistachios over the chocolate layer.
04 - Refrigerate the tray for 20 minutes, or until chocolate is completely firm.
05 - Remove from refrigerator, break into approximately 12 pieces, and transfer to an airtight container for storage.
