02 - Combine dark chocolate chips and heavy cream in a microwave-safe bowl. Heat in 20-second increments, stirring until the mixture is completely smooth. Allow to cool slightly.
03 - Transfer the cooled chocolate ganache into a piping bag or use a small spoon to fill each pitted cherry cavity with the mixture.
04 - Arrange stuffed cherries on a parchment-lined tray. Place tray in the freezer and chill for at least 2 hours, or until the bites are firm throughout.
05 - If desired, dust the frozen bites with cocoa powder before serving immediately.
