01 - Cook bacon in a skillet over medium heat until fully crisp. Transfer to paper towels to drain excess fat.
02 - In a mixing bowl, whisk eggs together with milk, salt and pepper for even seasoning.
03 - Wipe the skillet clean and melt 1 teaspoon butter over medium-low heat. Add egg mixture to pan and gently scramble until just set. Remove from heat immediately.
04 - Spread softened butter on one side of each bread slice. Arrange two slices with the buttered side down, layering half the cheese, scrambled eggs, two bacon slices, and remaining cheese. Top with the remaining bread slices, buttered side facing out.
05 - Heat skillet or griddle over medium-low. Place assembled sandwiches in pan and cook for 3–4 minutes per side, pressing lightly with a spatula, until both sides are golden brown and cheese fully melted.
06 - Transfer sandwiches to a cutting board, allow to cool slightly, slice and serve immediately.
