# Step-by-Step Guide:

- Heat vegetable oil in a large skillet over medium heat. Sauté onion, garlic, and ginger until fragrant, approximately 2 minutes.
- Add ground pork or chicken to the skillet. Cook while breaking up the meat until browned and cooked through, approximately 5-7 minutes.
- Stir in carrot, bell pepper, and napa cabbage. Sauté for 3-4 minutes until vegetables are just tender.
- Add soy sauce, hoisin sauce, rice vinegar, and sesame oil. Mix thoroughly and cook for 2 additional minutes. Remove from heat.
- In a medium saucepan, combine soy sauce, rice vinegar, honey, ginger, garlic, and chili flakes. Bring to a simmer over medium heat.
- Whisk cornstarch slurry into the simmering sauce and cook until thickened, approximately 1-2 minutes. Remove from heat.
- Lightly grease a 9x13 inch baking dish and spread a thin layer of soy ginger sauce on the bottom.
- Arrange 8 dumpling wrappers to cover the base of the prepared baking dish.
- Spread one-third of the meat-vegetable mixture over the wrapper layer, sprinkle with one-third of the mixed cheeses, and drizzle with sauce.
- Repeat layering two more times with remaining meat mixture, cheeses, and sauce, finishing with cheese and a final drizzle of sauce.
- Cover the baking dish with aluminum foil and bake for 25 minutes at 350°F.
- Remove foil and bake an additional 10-15 minutes until the surface is golden and the filling is bubbling at the edges.
